DNA: OUR ESSENCE
A total of 150 unique plots are the origin of all our wines and coupage. All of them organically grown and harvested by hand. 100% vinified on the property.
Only autochthonous varieties: MACABEO, XAREL·LO, PARELLADA and TREPAT for the rosé. Every harvest we select with microbiological culture the best yeasts of each variety. Thus, our wines ferment every year with their own yeasts, closing the singular circle of the vineyards of origin.
Mountain viticulture: the UBAC state from Mediona at 550 metres high is the cradle of our Parellada and Trepat grapes that give a different and unique stamp to our coupage: the night/day heat exchange and the particular shale soil provide and exceptional mineral character.
Masters of the Macabeu: authors of the only single-grape variety Macabeu Cava fermented in barrel. Macabeu is always the dominant variety in AGUSTÍ TORELLÓ MATA coupage.
Long aging in bottle: only Reserva with a minimum of 24 months of aging and Gran Reserva with aging from 3 to 10 years.
